Welcome to Defeat The Wheat™! My name is Deb Meyers, and I started making gluten-free baked goods many years ago for my twin sister, Pat, and my niece, Chris, who both have celiac disease. They both loved my creations, and continue to be the inspiration for Defeat The Wheat™, along with my wonderful husband, Greg. While working as a research chemist at a major corporation, I brought in my GF baked goods to give away. Coworkers really liked them and told me I should sell them. I felt my career in research, product development, and technical management could help me understand what customers would like, so I married my passion for cooking with my passion for chemistry, and Defeat The Wheat™ was born.

The other thing about me you should know is that I have a Ph.D. in chemistry. I spent several years developing all my recipes using a method called experimental design. Essentially, I varied the types and amounts of ingredients in a recipe, even the order of addition of ingredients, baking times and temperatures, for each product. The goal of my experiments was to make GF products that tasted better than their wheat-based equivalents. I even used a panel of tasters to help guide the product development. This process led to the moistest and most flavorful products I could make. Only then did I begin selling to health food stores and coffee shops in the area.
